Yes it’s our birthday! It was my birthday 2 weeks ago, and now it’s the first birthday of Fit Girl’s Diary!

Oh I am so exited! Can’t really believe that it has been an year since I first started, thinking that I could just try and make some little blog for the girls that want to lose weight. And not only lose weight, but start living healthy too, and change their body and life. I have to say, I took inspiration from me and my best friends. We had a tough journey, quitting every junk in our life, but we made it. I just knew what it really takes to wake up one day and say NO, I’ll not be the same anymore, I’ll change, starting from today.

Oh, it wasn’t easy, but I knew what it takes, so I wanted to share my story with all of you, and make sure to be with you from the very begging. You need someone that supports you and motivates you, so you could start getting healthy, but stay that way for a life too. Because of the reason that we don’t always have that needed support, I wanted to make this blog as your supporter, and your personal buddy and guide through this journey. So, that’s how Fit Girls Diary was born.

Birthday Project

So, for our first birthday, I wanted to make a birthday project. First of all, I made some treats for our supporters that have been here from the very beginning. I made some treats in a jar, and they turned out great. I already gave them to the people that earned them through their constant support, and they loved it.
I actually used a jar, some healthy cookies that I’ve made and dried fruits in different colors. I even added a little bit of oats in the end, to give a great finish. Now here’s the cookies recipe.

Healthy Birthday Treats In A Jar

Ingredients:

3 bananas
2 cups Oat flakes
2 teaspoons sesame integral or regular)
2  tbsp olive oil
1 cup dried cranberries
50 grams dark chocolate (at least 75% cocoa)
80 grams almonds
2 tablespoons honey
1 teaspoon cinnamon
Pinch of salt

Instructions:

In a mixing bowl put the oat flakes, two teaspoons sesame, olive oil, dehydrated cranberries, teaspoon cinnamon and 50g of dark chocolate pieces.
Chop the almonds and add them to the pot. Add a pinch of salt too.
Blend the bananas and add them to the mixture. Then add 2 tablespoons of honey and mix them together until you get a homogeneous mixture.
Form the cookies, put them on a baking tray.
Bake at 180 degrees, no more than 20 minutes. Be careful not to forget them, because you can easily burn them.

Well, they turned out great, I loved them, and the girls loved them too. I just had to make something extra for the party. You know, birthday is not a real birthday without a birthday cake, right? I had to make a cake. You remember the protein cake recipes I showed you few days ago? I made a list of protein birthday cake recipes, that I actually loved, and then I chose my favorite one, and made it for my birthday.
Now it was time for another birthday cake, but I was thinking something extra healthy, vegan, raw, no bake, no flour, no sugar. Well well well… I found the perfect recipe for this one year anniversary with Google, and the very first birthday of my blog, and it turned out great! Check out the recipe!

Healthy Raw Vegan Chocolate Birthday Cake Recipe

Ingredients

1 1/2 cups walnuts
1 1/2 cups almonds
1 1/2 cups dates
1 1/2 cups raisins
1/3 cup raw cacao powder
2 tablespoons honey

Icing:

4 tablespoons raw cacao powder
4 tablespoons honey

Instructions:

Blend the walnuts and almonds in a food processor, until they are minced.
Then add the other ingredients to the food processor one at a time and blend.
Continue processing until the mixture looks like a big ball of dough, without any big chunks of ingredients. Flecks of nuts are okay.
Shape the cake however you’d like.
Finally, refrigerate it for at least 1 hour to allow the cake to firm up. I left it in the fridge all day, but if you don’t have time, you can make it an hour.
For the icing, just mix the two ingredients, the cocoa powder and the honey. Mix them with a spoon, until you get a homogeneous mixture, and pour it on the top of the cake.

I have to tell you, I was amazed of the delicious taste that this cake has. It’s yummy, creamy, and so tasty and sweat, it will blow your mind! All of my friends liked it. This cake actually serves around 8-10 people, but it’s really easy and cheap to make. If you like to make it for more people, just make it double.
