Few days ago me and Matt decided to go for a picnic.

It was our 9 year anniversary, so instead of going in a fancy restaurant we decided to have a date in nature.

So we decided to make a few healthy meals to go and surprise each other when we get there.

Matt thought of this amazing idea for meals in a jar so we went for it.

He said he was doing a salad, so I decided to go for a healthy dessert and a drink.

That’s how I came up with my healthy, vegan, raw, easy to make and no bake pudding recipe.

It tastes so good, you won’t believe it’s made in just a minute.

Let’s get started with the recipe right now!

Meals In A Jar #1: Healthy Vegan Raw No Bake Pudding Recipe – Healthy Meals To Go

Have you ever tried a healthy pudding?

If not this is a “must”!

This meal in a jar is made out of few raw ingredients you just have to blend together.

Here’re the ingredients you’ll need.

Ingredients:

  • 1 peeled banana
  • ½ peeled avocado
  • 1 big tablespoon raw cocoa powder
  • 1 tablespoon frozen berries
  • 1 tablespoon nuts
  • 1 teaspoon coconut oil

This dosage fills out one mason jar, so you’ll have to use double the ingredients if you want to make 2 of them.

Now when it comes to the pudding, you can make it only with the first 3 ingredients, but it tastes much better when combined with these ingredients.

Just delicious.

Now what you have to do is blend all the ingredients together – except the berries and pour them in a jar.

If you want to make layers of two colors, just put a few tablespoons apart without mixing the cocoa and add them on top of the pudding.

In the end, add the berries on top – I used raspberries.

You’ll be more than surprised how this one tastes – yumm.

You can use this as a cake filling or even a fruit dip – it tastes like freaking Nutella :)

Matt was impressed and liked it a lot.

Now, let’s head on to my second of the two meals in a jar, the berry yogurt.

 

Meals In A Jar #2: Frozen Berry Yogurt

This is one quick and easy to make sugar-free berry frozen yogurt, ready in just a few minutes.

It tastes delicious and at the same time it’s healthy.

Now, this is not a vegan or raw recipe, since it contains Greek yogurt, but if you’re not a vegan I have to say there’s no harm in having a glass or two now and then.

Yogurt is a drink that’s loaded with probiotics, and even though I stopped eating dairy products myself, I kept the yogurt in my diet because of it’s health benefits.

So, this recipe contains less than half a cup Greek yogurt and the rest is frozen berries.

Here’re the ingredients.

 

Ingredients:

  • ½ cup greek yogurt
  • 1½ cup frozen berries
  • 1 tablespoon chia seeds

You just have to blend everything together, and your berry yogurt is ready.

You can add half banana if you want to make it sweeter, but I like it like this anyway.

For the berries, I used raspberries and strawberries, but you can try with blueberries or blackberries too.

In the end, pour them in mason jars and enjoy :)

This dosage fills out 1 jar.

 

Meals In A Jar #3: Layered Caprese Pasta Salad

Now, this was the main dish, prepared by my other half – Matt.

And I have to admit he surprised me a lot with this recipe, since this was THE BEST pasta I’ve ever tried!

I just loved it!

So creamy and delicious, you have no idea – yet packed with healthy ingredients.

MATT, YOU’RE THE BEST COOK!

I enjoyed every single bite of it – well done my love!

This is such a great idea for a picnic, hiking or even healthy meals-to-go for work or school.

Let’s head on to the ingredients.

Ingredients:

  • ⅓ cup basilica pesto dressing
  • 2½ ounces fresh mozzarella cheese
  • ½ cup red cherry tomatoes (cut in halfs)
  • ⅓ cup dried tomatoes
  • ½ cup cooked whole wheat pasta
  • ¼ cup fresh basil
  • ¼ cup fresh arugula

Now, start adding the ingredients in the mason jar one by one –

starting from the pesto first and topping it all with the basil and arugula last.

Close the jar nice and add it in your picnic basket.

When you pour it in a dish everything will be in the right order :)
