I love to recipes that are fast, easy, and don’t much ingredients.

One of them is today’s healthy veggie stir recipe!

Don’t get me wrong:

I love cooking, but I don’t always have the time.

And I can imagine it’s the same with most of us girls that have a full time job and don’t know where to start when we start cooking.

That’s why I like it easy and fast.

Also, it’s so important to keep your ingredients as fresh as possible making sure you’re not overcooking them.

In my eBook and weight loss guide I’m talking about how easy you can ruin a bunch of perfectly healthy ingredients, just by making a few wrong moves.

That’s why in today’s recipe is all about keeping the veggies filled with vitamins.

The truth is I love veggie stirs, but when exposed over high heat veggies tend to lose most of their micro-nutrients and with what’s left of them your body cannot profit.

So, I figured a way to cook your veggies the right way, but still make them taste like a stir fry.

I’ll oven bake them and you’re going to LOVE them!

Let’s get started right away with my healthy veggie stir recipe!

Healthy Veggie Stir Recipe – Fast And Easy Oven Baked Veggies

For this veggie stir I decided to use few of my all time favorite veggies.

You can always experiment and use some of your faves, just make sure to wash the and peel them right.

Ingredients:

  • 1 cauliflower
  • 1 broccoli
  • 1 big sweet potato
  • 1 parsnip
  • 2 small (or 1 big) beetroot

 

I peeled and washed everything nice, then I chopped the veggies and poured them in a baking pan.

I used few spices and herbs to spice things up:

  • Dried basil
  • Thyme
  • Garlic powder
  • Himalayan salt
  • Pepper

Also, I added about 2 tablespoons of olive oil, nothing more.

In the end, place aluminium foil over the whole pan, so they can cook on their own steam.

Bake them for 40 minutes on 380 F temperature in a preheated oven, and then another 5 without the foil.

After they’re out of the oven, add few squeezes of fresh lime, wait them to cool down, and dig in!

This would make 3 servings, or even 5 if you’re using the veggie stir as a side dish.

As you can see, I pared them with chicken breast, to add up a muscle friendly side to this delicious vegan dish.

Yum yum!
