Today's breakfast recipe
Ingredients:
- 1 cup low-fat Greek yogurt
- 2/3 cup rolled oats (aka old fashioned oats)
- 1 small banana
- 1/2 cup berries
- 1 tablespoon peanut butter
- 1 teaspoon chia seeds
Instructions:
Mix your rolled oats with the low-fat Greek yogurt and chia seeds.
Thinly slice the banana into circles and add it on top of the oats, together with the berries.
You can use berries by choice, however, if they’re frozen make sure to unfreeze them first, they taste much better that way.
Top it all off with a teaspoon of peanut butter.
Today's lunch recipe
Ingredients:
- 1 large whole-grain tortilla (or two smaller)
- 1 small piece of chicken breast, around 5 oz
- 1 red bell pepper, thinly sliced
- 1 cup baby spinach
- 1 tomato, diced
- 1/2 red onion, diced
- 1/2 avocado
- 1/2 lime or lemon, freshly squeezed
Instructions:
Thinly slice the chicken breast lengthwise.
Season it with salt and pepper, drizzle olive oil over it and mix it nicely.
Cook it in a skillet over medium heat for 5 minutes.
You can cook some extra for dinner too (check your dinner recipe for more info).
Once the chicken is ready toss the red pepper into the pan, drizzle few drops of olive oil, and cook for 3-4 minutes.
For the guacamole sauce mash the avocado, toss in lime juice, diced red onion, and tomato.
Mix it nicely and season with salt and pepper.
Once everything’s ready, warm the whole-grain tortilla in a skillet.
Transfer it to a plate and fill it with the guacamole, chicken, red pepper, and baby spinach.
To finish it all off, squeeze the lime on top of the spinach and sprinkle salt and pepper.
Wrap it up and dig in!
Today's dinner recipe
Ingredients:
- 1 piece of chicken breast (around 5-7 ounces)
- 1/2 cup low-fat Greek yogurt
- 1/2 fresh cucumber
- Spices: Dill, Garlic and Mint
- Fresh arugula salad
Instructions:
Season your chicken breast with salt pepper and olive oil, grill it in a skillet or grill pan for 5 minutes on each side.
Meanwhile, peel and cut your cucumber into small cubes, and add it to the Greek yogurt.
Stir in the spices and mix well, together with few drops of olive oil.
Once ready, serve and dig in.
Today's snack recipe
Ingredients:
- 1 small green apple
- 1-2 tablespoons peanut butter
- Rolled oats
Instructions:
Wash the apple nicely and slice it into circles.
Remove the central part where the seeds are using a knife or a seed remover.
Spread peanut butter on top and sprinkle a pinch of rolled oats.
