Today's breakfast recipe
Ingredients:
- 2-3 slices of whole-grain bread
- 1/2 avocado
- 1/2 lemon, freshly squeezed
- 1 small piece of goat cheese
- Handful of walnuts
Instructions:
Mash the avocado using a fork, and mix it with the freshly squeezed lemon juice and a pinch of salt.
Spread it on the slices of whole-grain bread, and top with crushed goat cheese and crushed walnuts.
Today's lunch recipe
Ingredients:
- 1 small piece of chicken breast (around 5 oz)
- Spices: cumin, red pepper, onion powder, garlic powder, salt, and pepper.
- 1/2 sweet potato
- 1/2 tomato
- 1 tablespoon toasted sunflower seeds
- 5-6 olives
- 1/2 avocado
- 1 tablespoon Greek yogurt
- Fresh spinach salad
Instructions:
Preheat the oven to 400F.
Peel and cut the sweet potato into cubes.
Spread it on one side of a baking sheet, drizzle few drops of olive oil, season with salt, and pepper.
Cut the chicken breast into small cubes.
Spread it on the other side of the baking sheet, drizzle olive oil and sprinkle all of the spices.
Toss in the oven and cook for 15-20 minutes.
For the dressing, mash the avocado with the Greek yogurt, add a pinch of salt and a few drops of fresh lemon juice.
To toast the sunflower seeds, just add them to a hot skillet pan for a minute.
Once they start getting golden, they’re ready.
Once everything’s ready, add the spinach in a salad bowl. Add the chicken, sweet potatoes, toasted seeds, tomato, and few olives.
Top with the avocado dressing.
Before digging in, make sure to mix your salad nicely.
Today's dinner recipe
Ingredients:
- 2 whole eggs
- 1 egg white
- A handful of fresh spinach
- 2-3 thin slices of mozzarella
- 1/2 fresh tomato
Instructions:
Add the eggs, egg white, and spinach into a blender or food processor.
Blend for a few seconds until smooth.
Heat a few drops of olive oil in a skillet over medium-high heat.
Pour the egg mixture into the pan, reduce heat to medium.
Swirl the pan so that the mixture completely covers the base.
Cook for around one minute on each side.
Once cooked, add the omelet to a plate.
Add the mozzarella and tomatoes to one half of the omelet, sprinkle salt and pepper and fold it over.

Ingredients:
- A handful of almonds (around 15 almonds)
Instructions:
Always go for raw almonds over toasted.
If you prefer the toasted ones – go for it, just make sure they’re not too salty.
