Add the eggs, egg white, and spinach into a blender or food processor. Blend for a few seconds until smooth.
Heat a few drops of olive oil in a skillet over medium-high heat.
Pour the egg mixture into the pan, reduce heat to medium. Swirl the pan so that the mixture completely covers the base. Cook for around one minute on each side.
Once cooked, add the omelet to a plate. Add the mozzarella and tomatoes to one half of the omelet, sprinkle salt and pepper and fold it over. And the most important steps of all, don’t forget to take a photo before digging in :)
