1/2 can plum tomatoes, less than 1 cup (save the other half for tomorrow)
1 small onion, finely chopped
1 carrot, trimmed and finely chopped
1 garlic clove, finely chopped
Spices: onion powder, red pepper, dried parsley, oregano, basil, salt, and pepper
3-4 ounces whole-grain pasta (you can swap it for lentil flour or chickpea flour pasta to make it even healthier)
Put a large saucepan on medium heat and add 1 tablespoon olive oil. Add the minced meat, together with all of the spices and cook stirring for 3-4 mins until the meat is browned all over. Once cooked pour it into a bowl and set it aside.
Next, add the chopped onions, carrot, and garlic clove to the same pan you cooked the meat in, and cook it stirring for 2-3 minutes, until the onion softens. Once cooked, add back the meat and pour the can of plum tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes.
Bring to the boil, reduce to medium-low heat, and cover with a lid. Cook for around 20 minutes stirring occasionally, until you have a rich, thick sauce.
When the bolognese sauce is nearly finished, cook the pasta following the package instructions. Drain it nicely and add it to a plate. Serve the sauce on top and dig in!
You can also add a tablespoon of grated parmesan on top.
