Combine the oat flour with the baking powder and a pinch of salt, and set them aside.
* If you have, you can use oat flour too, about 1/2-2/3 cup.
Add the banana to the blender, together with the eggs and coconut oil, and blend them until smooth.
Once blended, pour the mixture into the oat flour. Add the sparkling water and start mixing using a spoon.
If the texture is too thick, add more sparkling water.
On a preheated pan start forming circles of the mixture with a spoon.
Each pancake should be 1-2 tablespoons of the mixture.
Cook over medium-low heat for about a minute on each side.
Once ready, stack them one on top of the other, spreading peanut butter between each pancake.
Top with berries.
Cut your zucchini lengthwise and grill them on a griller or a toaster, spreading a little bit of olive oil so they don’t stick.
Meanwhile, cut the chicken breast into small cubes, sprinkle olive oil, salt, and pepper.
Once the zucchinis are grilled, start rolling them with a small piece of chicken (see the photo below).
Add them in a small pan one by one, until you don’t have any left.
Once they are all rolled, sprinkle salt and pepper over them and pour the tomato can.
Oven bake on medium heat for about 30 minutes.
Spices: basil, marjoram, rosemary, thyme, paprika, garlic, salt and pepper
Pre-heat oven to 450F.
Line a baking sheet and set aside.
Chop the chicken breast into cubes.
Do the same with the zucchini, onion and tomatoes.
In a small bowl, mix the spices.
Place the chicken and veggies in the baking dish. Sprinkle all the spices and garlic evenly over the chicken and veggies.
Drizzle with the olive oil and mix them nicely.
Bake for around 20 minutes, or until the chicken is cooked, and veggies are slightly charred.
If you feel like making a more interesting snack out of this, you can try out my frozen blueberry bites.
Just gently fold in the blueberries to coat in the yogurt.
Scoop them up with a fork, and place them on a baking sheet, making sure not to have them touch.
Freeze them for about an hour, and get ready to snack :)
