Spices: onion powder, garlic powder, red pepper, ginger, chilly powder, salt, and pepper.
This is a fast recipe. If you haven’t cooked red lentils before, it needs 10-15 minutes to fully cook.
Heat a saucepan over medium. Drizzle olive oil and stir in the onion, carrot, and garlic. Cook them stirring for 2 minutes, or until they turn golden.
Then stir in the lentils. Mix well for a full minute, then add 2 cups of water. Stir in the spices and the fresh parsley, and let it cook for about 10 minutes with occasional stirring.
If the consistency of the lentils is too thick, you may need to add in another 1/2 cup of water. Once the lentils is fully cooked, add it to a plate and dig in. Side it with thinly sliced cabbage salad, seasoned with olive oil and lemon juice.
