Today's breakfast recipe
- 2/3 cup rolled oats
- 1 cup almond milk
- 1 teaspoon of cacao powder
- 1 banana
- Few hazelnuts
Instructions:
Add the rolled oats to a bowl and pour the almond milk on top of them.
Mash 1/2 banana and stir it in the mixture, together with the cacao powder.
Microwave for a minute, or until the milk warms up.
Finish with banana circles and hazelnuts on top.
Today's lunch recipe
- 1/2 cup brown rice
- 1 1/2 – 2 cups of water
- 1/4 cup white wine
- 1 cup sweet peas, canned or frozen
- 1 cup broccoli florets
- 1/4 cup sweet corn, canned or frozen
- 1 clove garlic, minced
- 1/2 onion, minced
- Spices: onion powder, garlic powder, parsley, dill
Instructions:
Heat 1 tablespoon olive oil in a large saucepan over medium heat.
Add the garlic and onion and cook until softened, 1-2 minutes.
Stir in the rice and cook stirring for about 2 minutes.
Add the wine and cook, stirring often until the wine has mostly evaporated.
Next, add in the water and the spices, increase heat to high, and bring to a boil, stirring occasionally.
Add the broccoli, corn, and peas.
Cover, reduce heat to low and simmer undisturbed until most of the liquid has been absorbed around 30 minutes.
Once ready, remove from heat, and serve.
You can side it with a bowl of salad by choice.
Today's dinner recipe
Ingredients:
- 1 piece of chicken breast, around 5-7 ounces
- 1/2 can plum tomatoes
- Few slices of mozzarella
- Spices: oregano, onion powder, salt and pepper
Instructions:
Split the chicken breast into two thin pieces.
Season them with onion powder, salt, and pepper and place them in a casserole dish.
Spread the slices of mozzarella over the chicken breast.
Mash the plum tomatoes slightly and pour them over the chicken.
Sprinkle salt, pepper, and oregano.
Cook for 20-30 minutes at 400F.
Today's snack recipe
- 1 cup Greek yogurt
- 1 cup raspberries, frozen or fresh
- 1-2 tablespoons peanut butter
Instructions:
Pour the yogurt into a tray lined with parchment paper and spread it evenly.
Top it with the raspberries, and drizzle the peanut butter over it.
Freeze for at least 1 hour.
Once ready, break it apart and enjoy.
