Wash your potatoes and toss them in boiling water, peels on.
Cook them for 5-10 minutes. They shouldn’t be fully cooked, just soften up a little bit.
Drain and rinse them, and cut them into half.
Cut the chicken breast into thin pieces, and add them to a bowl together with the potatoes.
Add the parmesan, drizzle olive oil, onion powder, salt, and pepper, and mix them nicely.
Toss them on a baking sheet and cook for 20-30 minutes on a preheated 400F oven.
You can side it with a bowl of green salad by choice.
