Mash the banana with a fork.
Use a ripe banana if you have one, to get a better texture.
Add the 2 eggs into the mashed banana and whisk them nicely.
Also, add the oats and a sprinkle of cocoa powder and mix them all together.
Heat a pan over medium heat, and sprinkle few drops of olive oil.
Pour the mixture into the pan and swirl the pan so that the mixture completely covers the base.
Cook for around one minute on each side.
Be careful not to burn your omelet – cook slowly over low to medium heat.
Also, to flip it without breaking it, use a palette to loosen the edges first.
Lift an edge to see if the underside is golden brown.
Shake the pan to loosen the rest of the omelet.
Once loosened up, slide a spatula under it and flip it.
Once it’s cooked on both sides, add it to a plate.
You can add the peanut butter on one side and fold it over, or if you used a smaller pan and the omelet is thicker, just spread the peanut butter on top.
Add the berries, sprinkle few crushed almonds on top, and dig in!
