Zucchini Baked Pie
Ingredients:
– 2 zucchini
– 3 egg whites
– 2 tablespoons whole wheat flour
– 1/2 teaspoon dill
– 3 teaspoons Parmesan
– 2 tablespoons olive oil
– salt & black pepper
Cut the zucchini into circles. In a bowl beat 2 egg whites. Add the flour and stir with a wire to break up lumps. Add the dill , a little salt and black pepper. In a round mold put baking paper and add the oil. Dip each zucchini round in the egg white and flour mixture and arranged them in the mold. Sprinkle the top with the 1 egg white, and finally apply the Parmesan .
Bake at 200 degrees until they are lightly browned.
Tagliatelle With Zucchini Sauce
Dressing:
– 2 small zucchini
– 2-3 cloves of garlic
– 150 gr cottage cheese
– 100 gr peanuts
– salt & black pepper
Marinated Zucchini Salad
Marinade:
– 150ml olive oil
– 200ml balsamic vinegar
– 2 cloves of garlic
– 4-5 sage list
– 1 tbsp rosemary
– parsley or basil
– salt and pepper
