Zucchini Baked Pie

Ingredients:

– 2 zucchini
– 3 egg whites
– 2 tablespoons whole wheat flour
– 1/2 teaspoon dill
– 3 teaspoons Parmesan
– 2 tablespoons olive oil
–  salt & black pepper

Cut the zucchini into circles. In a bowl beat 2 egg whites. Add the flour and stir with a wire to break up lumps. Add the dill , a little salt and black pepper. In a round mold put baking paper and add the oil. Dip each zucchini round in the egg white and flour mixture and arranged them in the mold. Sprinkle the top with the 1 egg white, and finally apply the Parmesan .
Bake at 200 degrees until they are lightly browned.

Tagliatelle With Zucchini Sauce

Ingredients:
– 300gr tagliatelle
Dressing:
– 2 small zucchini
– 2-3 cloves of garlic
– 150 gr cottage cheese
– 100 gr peanuts
– salt & black pepper
olive oil
Boil the tagliatelle. In a pan put 1 tbsp olive oil, and put the finely grated zucchini. After 1 min, put 1/4 cup water, salt and pepper. Meanwhile, grate the garlic, and after the water evaporate, put it together with the zucchini. When the zucchini soften, transfer them to a blender and add the cheese and the peanuts. Drain the tagliatelle, and mix them with the blended sauce. Bon Appetite!

Marinated Zucchini Salad

Ingredients:
– 400 gr. zucchini
Marinade:
– 150ml olive oil
– 200ml balsamic vinegar
– 2 cloves of garlic
– 4-5 sage list
– 1 tbsp rosemary
parsley or basil
salt and pepper
Cut the zucchini in circles. Put salt on them, and leave them on a napkin to soak up the liquid. In a pan covered with baking paper arrange the zucchini rounds and bake them. You can grill them if you like them better that way.
At the end, mix all the ingredients for the marinade, and put the baked or grilled zucchini it the marinade. Leave them at least 15 min, and get ready to eat!
